This comfort food dish is found on menus across the Hawaiian Islands. Loco moco is often eaten for breakfast but with a hamburger and fried egg topping a bed of rice—all covered in gravy. It makes a hearty meal any time of day. The recipe’s creation dates to 1949. A group of teenage boys were looking for something fast, different, and cheap to eat in Hilo, Hawaii. Loco moco was created at either the Café 100 or Lincoln Grill, following the teenagers’ instructions. They named the dish loco moco – “loco” being Spanish for crazy, and “moco” because it rhymed with loco.

Ingredients
Burgers:
- 1½ lbs ground beef
- ½ cup diced onion
- ½ cup panko breadcrumbs
- 1 Tbsp salt
- 1 Tbsp ground black pepper
- 1 tsp Worcestershire sauce
- 1 egg, slightly beaten
- Oil, for frying
Gravy:
- 2 Tbsp unsalted butter
- 6 Tbsp all-purpose flour
- 2 cups beef broth
- Dash Worcestershire sauce
- Salt, to taste
- Ground black pepper, to taste
The Plate:
- Hot cooked rice
- 4 eggs, fried over easy
Directions
- Make burgers by mixing ground beef, onion, panko, salt, pepper, Worcestershire, and egg. Form into patties.
- Cook burgers to desired doneness in pan over medium-high heat. (Medium rare is about 10 minutes.)
- Remove excess oil from pan and set aside for gravy.
- Make gravy by combining butter and burger oil in a pan over medium high heat. Add flour and whisk to remove lumps. Slowly add beef broth and stir constantly until smooth.
- Add Worcestershire, salt, and pepper to taste, cooking until gravy mixture is thickened and flour taste is gone.
- On a plate add hot steamed rice, top with a burger and then a fried egg. Drizzle gravy over top and serve.
