This recipe represents regional food of both coasts, featuring fresh salmon accented with a slightly sweet and tangy glaze made with maple syrup. From the Pacific Northwest comes salmon, a historically important food source for Native Americans. From the Northeast comes maple syrup, made primarily from New England's sugar maple trees; however the Pacific Northwest's bigleaf maples can be tapped to make sugar as well. No matter the coast, this dish is as healthful as it is delicious and pairs beautifully with a wide variety of side dishes.

Ingredients
- 6 salmon fillets (6 oz each)
- ¼ cup packed brown sugar
- ¼ cup maple syrup
- 3 Tbsp soy sauce
- 1 Tbsp Dijon mustard
- ¼ tsp ground black pepper
- 4 tsp sliced almonds, toasted (optional, for garnish)
Directions
- Preheat oven to 425°F and grease a 13 x 9-inch baking dish.
- Place salmon fillets into dish.
- Combine brown sugar, maple syrup, soy sauce, mustard, and ground black pepper in small bowl, mixing well.
- Pour mixture over salmon, cover dish, and bake 10 minutes.
- Uncover dish and continue baking for 8–10 minutes longer or until fish flakes easily with fork.
- Garnish with almonds before serving if desired.
