Many soups throughout the world include meatballs. A combination of lean and fatty meat increases a meatball’s flavor and they can be made with many different meats. Meatballs are likely Persian in origin, coming from the area of modern-day Iran. There, kofta is a type of meatball made with minced or ground meat, spices, and onion. Common additions in meatball soup are pasta, dumplings or grains.

Ingredients
- 1 onion, diced
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1½ lbs frozen or homemade meatballs
- 6 cups beef broth
- 1 can (28 oz) diced tomatoes, undrained
1 tsp Italian seasoning, crushed
- ⅔ cup ditalini or orzo pasta
- 2 cups frozen vegetables
Directions
- Cook onion and garlic in oil in large saucepan or pot over medium heat, 5–8 minutes.
- Add prepared meatballs and beef broth. Cook 10 minutes.
- Add tomatoes, seasoning, pasta, and frozen vegetables.
- Simmer, covered, 15 minutes or until pasta is cooked.
