Sheep were introduced to the Navajo by Spanish colonists and the animal became essential to the Navajo way of life. The churro was the first breed of sheep kept by Native Americans in the Southwest, though today they are a rare, heritage breed. Sheep and sheep products formed a significant part of the Navajo culture and economy; sheep were utilized by the Navajo for wool as well as for meat. Nearly every part of the animal was used in some way. This recipe uses mutton, which is the meat of a mature sheep, to form the base of a Navajo-style meatloaf.

- Preheat oven to 350°F.
- Grind the mutton with a meat grinder.
- Add the canned tomatoes, bread, onion, salt, celery, and pepper.
- Mix well and shape into a loaf.
- Place the loaf in an 8½ x 11-inch pan.
- Bake for 45 minutes.
