Oyster were once a cheap, working-class food in the early 19th century and were harvested in New York Harbor. Rising demand and the introduction of foreign species wiped out the oyster beds in the early 20th century. Oysters are now a delicacy and can be roasted, baked, or fried.

Ingredients
- 1–2 pts shucked oysters, rinsed and drained
- Oil, as needed for frying
- 2 eggs
- ½ cup milk
- Salt, to taste
- Ground black pepper, to taste
- 1 tsp garlic powder
- 1 cup biscuit mix
- 1 cup Italian breadcrumbs
- 1 cup all-purpose flour
Directions
- Beat eggs, milk, garlic powder, salt, and pepper in bowl.
- Combine the biscuit mix, breadcrumbs, and flour in another bowl.
- Dip oysters in egg wash and then coat with breadcrumb mixture.
- Add ½-inch oil to pan and heat over medium heat.
- Fry oysters 3–4 minutes until golden-brown on both sides.
- Serve immediately.
Notes
If firmer oysters are preferred, blanch oysters in boiling water 2–3 minutes before dipping in egg wash.
