These savory dumplings, considered by some to be one of Russia's national dishes, are a favorite winter meal closely associated with Siberia. Pelmeni are filled with ground meat and onions, and are best served with plenty of fresh dill and sour cream or melted butter. For a more decadent treat, add salmon caviar.

Dough:
Filling:
- 1½ lb ground veal, beef, or pork
- 2 onions, finely chopped
- Salt, to taste
- Black pepper, to taste
- Water, as needed
- Sour cream, for serving
Directions
- Mix flour, eggs, salt, and water into a firm paste and let stand for 1 hour.
- Roll dough out very thin and cut into 2½ inch circles. Set aside.
- To make the filling, mix meat, onion, salt, and pepper together with enough water to make the filling slightly moist.
- Put 1 teaspoon of filling in the middle of each pastry circle, moisten the edge of the circle, bring the corners together, and crimp the edges together.
- Carefully lower the pelmeni into boiling water or chicken stock and cook for 15 minutes.
- Serve with sour cream.
