Cooking meat adodo means to prepare it in a sauce or marinade made with vinegar and spices. This practice traces to Spain and Portugal and found its way to the Southwest United States through Spanish explorers. Using vinegar also acted as a preservative for food when convenient refrigeration was not possible. Adobo dishes are popular in the Southwest today and are a specialty in New Mexico.

- Heat oil in large pan and rotate pan to coat sides.
- Add pork pieces and cook until meat is browned, about 4–5 minutes.
- Add garlic and cook 1 minute. Add soy sauce, vinegar, bay leaf, pepper, and water.
- Bring to a boil and then reduce heat and simmer 45 minutes or until pork is tender. Add water ½ cup at a time as pork cooks, until a desired amount of sauce is made. Do not allow pork to dry out—watch carefully.
- Stir in honey or brown sugar.
- Serve over cooked rice.
