Pork Chop Sandwiches

The “original” pork chop sandwich has been a favorite on the streets of Butte, Montana, since 1924. That's when John Burklund— the original “Pork Chop John”—started selling sandwiches from the back of a wagon located at the corner of Mercury and Main. These popular sandwiches are lightly breaded with all the fat and gristle removed from the meat, leaving a tender chop behind.  The restaurant John Burklund founded is still around today, known as “Pork Chop John’s,” and the sandwich has gone national, finding a special place in the hearts of North Carolina diners.

Ingredients

Pork Chops:
  • 3 cups all-purpose flour
  • 2 tsp seasoned salt 
  • 2 tsp ground black pepper 
  • 1 tsp cayenne pepper
  • 12 boneless, thin cut pork chops 
  • ½ cup vegetable oil 
  • 2 Tbsp butter, divided

Directions

    For Pork Chops:
  1. Combine flour, seasoned salt, ground black pepper, and cayenne pepper in a baking dish.
  2. Coat both sides, as well as the edges, of each pork chop with the spice mixture. Shake off excess and set aside on a plate.
  3. Heat oil and 2 tablespoons of the butter in a large skillet over medium high heat, until the butter melts.
  4. Sear pork chops on both sides, about 2 minutes per side, until all chops are browned and fully cooked.  
  5. Remove pork chops from heat and let drain on a paper towel-lined baking sheet.
  6. For Cherry Pepper Mayonnaise:
  7. Stir together the mayonnaise, diced peppers, lemon juice, salt, and ground black pepper in a mixing bowl until well-combined.
  8. For Assembly:
  9. Place the butter in a skillet set over medium heat.
  10. Add the buns to the hot melted butter cut-side down and cook until browned and crisp. 
  11. Spread the pepper mayonnaise onto the cut side of every bun half.
  12. Top each bottom bun with a pork chop, a slice of cheese, a lettuce leaf, and a slice of tomato.
  13. Place the top buns over the toppings to complete the sandwiches.
