Roasts are often cooked as the Sunday meal, a tradition that traces to England. Easy to prepare, this roast has a simple spice rub applied before baking. Allow meat to rest after cooking and prior to slicing so juices do not run out. Loin is found between the shoulder and back legs of the pig and is the leanest and most tender part of the animal. Be careful not to overcook.

Ingredients
- 1½ Tbsp fresh rosemary
- 2 tsp garlic salt
- ½ tsp dried thyme
- ¼ tsp freshly ground black pepper
- 3 lbs boneless pork loin roast
Directions
- Preheat oven to 350°F.
- Mix rosemary, garlic salt, thyme, and pepper in large resealable plastic bag.
- Place roast into bag, seal, and toss until roast is thoroughly coated with spice mixture.
- Transfer meat to medium baking dish.
- Cook roast 60 minutes or to internal temperature of 145°F.
- Let meat rest 5–10 minutes before slicing, tenting foil over dish to keep warm.
