Rock shrimp are plentiful in Florida and along the Gulf Coast. Their name derives from their hard shell. Until machines were developed to process them, rock shrimp were primarily enjoyed by avid fisherman and divers. Today they are found on menus around the country. They are delicious tossed with a light lemon butter sauce. Easy to prepare, rock shrimp is said to have a taste and texture like lobster.

- Melt 1 tablespoon butter in pan over medium heat.
- Add olive oil and garlic. Stir to combine.
- Add shrimp to pan and toss to coat with butter. Spread into a single layer.
- Cook shrimp for 3–4 minutes, stirring to cook all sides. Shrimp is done when flesh turns white. Use tongs to remove any shrimp that finishes cooking early.
- Transfer cooked shrimp to serving dish.
- Melt 1 tablespoon butter in the pan. Add lemon juice and vegetable broth. Stir to combine. Simmer 5 minutes to thicken.
- Pour lemon butter sauce over shrimp and garnish with parsley if desired.
