Rouladen is an easy contender for one of Germany’s favorite dishes, and with a recipe that includes steak, pickles, and bacon, there is not much to dislike about the dish. These meat rolls make a hearty dish with complex but well-balanced salty, tart, and savory flavors that are perfectly complemented by a starchy side. While the long, slow cooking time might be a deterrent to some cooks, these rolls are very easy to make and definitely worth the investment.

- Slice flank steak into thin pieces, about ¼ inch thick and 2–3 inches wide.
- Spread mustard over steak slices to taste. Layer bacon, onion, and pickle slices on top of the mustard. Roll each roulade tightly and secure with twine or toothpicks.
- Heat butter in a skillet over medium heat. Place the rolls in the pan and sauté for a few minutes until browned on each side.
- Add water and bouillon cube to pan, stirring until seasonings dissolve.
- Simmer rolls until meat is tender, about an hour.
- Serve with spaetzle or red cabbage with apples on the side.
