Scrambled eggs are a great breakfast and simple to prepare. Many ingredients can be added to scrambled eggs, including sautéd chopped vegetables, cheese, and salsa. Because eggs contain a large amount of protein, they give a feeling of fullness. Packed with nutrients, eggs contain Vitamins A, B5, B12, D, E, K, and B6. Eating eggs helps with weight loss, increases muscle mass, lowers blood pressure, and aids bone and eye health. A few tips on cooking scrambled eggs include not overcooking; remove eggs from the pan after cooking as the pan retains heat and will continue cooking eggs. Cast iron pans will give eggs a greenish cast and is not recommended. Beating eggs lightly or vigorously is a matter of preference. Lightly beating them results in a denser texture while beating a lot produces fluffier eggs since more air is added.

Ingredients
- 4 eggs
- ¼ cup milk
- Salt, to taste
- Ground black pepper, to taste
- 2 tsp butter
Directions
- Beat eggs, milk, salt, and pepper in medium bowl until blended.
- Heat butter in pan over medium heat until hot.
- Pour in egg mixture. As they begin to set, gently pull eggs across pan with spatula, forming large soft curds.
- Continue cooking while occasionally pulling, lifting, and folding eggs, until thickened and no visible liquid remains.
- Serve immediately.
