Smothered pork chops are a favorite Southern food and popular in Louisiana. Simple to prepare, pork chops get a dusting of seasoned flour and a topping of silky sauce. Pork’s place in American culture took root when Spanish explorer Hernando de Soto brought 13 pigs to Florida in 1539. Three years later they’d multiplied to over 700. Pork was an affordable meat in the South, easy to raise and used less resources than raising cattle.

Ingredients
- 1 cup all-purpose flour
- 2 Tbsp onion powder
- 2 Tbsp garlic powder
- 1 tsp cayenne
- 1 tsp salt, plus more
- ½ tsp freshly ground black pepper, plus more
- 4 pork chops, ¾-inch thick, bone-in
- ¼ cup olive oil
- 1 cup chicken broth
- ½ cup buttermilk
- Chopped fresh flat-leaf parsley, for garnish
Directions
- Place flour, onion powder, garlic powder, cayenne, salt, and pepper on plate or shallow dish. Mix together well.
- Pat pork chops dry with paper towels and then dredge in seasoned flour mixture. Shake off excess.
- Heat oil in a large pan over medium heat until hot.
- Lay pork chops in pan in single layer and fry 3 minutes on each side until golden brown.
- Remove pork chops from pan and add a little seasoned flour to pan drippings.
- Mix flour and drippings then pour in chicken broth.
- Let broth cook down 5 minutes to reduce and thicken.
- Stir in buttermilk and return pork chops to pan, covering with sauce.
- Simmer 5 minutes until pork is cooked through.
- Season with salt and pepper and garnish with chopped parsley before serving.
