Souvlaki is a dietary staple in Greece, and is so common that it is considered a national dish. It is extemely popular in the United States as well, both among Greek Americans and Americans of other ethnic backgrounds who simply enjoy a delicious grilled lamb dish. Although souvlaki can be made in an oven, the most traditional texture and flavor is achieved by preparing it on an outdoor charcoal grill, as in this recipe. If possible, buy the lamb pre-cut into cubes; many butchers will be able to assist with this part of preparation.

- Preheat the grill to medium. If using wooden skewers, soak them in water for 30 minutes.
- Rinse the lamb, pat it dry, and cut it into bite-size cubes.
- Season the cubes of meat with salt and pepper.
- Allow the seasoned lamb to rest for 15 minutes at room temperature.
- Mix the olive oil, lemon juice, and oregano in a large bowl.
- Skewer the pieces of lamb using the soaked wooden skewers or metal skewers.
- Place the skewers on the heated grill and bast them with the lemon juice mixture on both sides.
- Cook for 10 minutes, turning every few minutes until the meat is browned on all sides.
- Remove skewers from grill and serve.
