Commonly known as a Capriotti’s sub and also as “Thanksgiving on a roll,” the Bobbie sandwich is named after an aunt of the founders of the Capriotti’s restaurant chain. The aunt’s name was actually Winona, but she hated that name and always just went by “Aunt Bobbie.” Each year in late November, Aunt Bobbie made this recipe for Capriotti’s future founders from Thanksgiving leftovers.
Today, Capriotti’s restaurant has locations throughout the United States. They still slow roast their pulled turkey in-house to achieve the freshest possible flavor for the Bobbie, which has been a local favorite in Wilmington, Delaware, for more than 40 years.

Ingredients
Stuffing:
- ⅓ cup butter, plus more for topping
- 1 small onion, diced
- 2 celery stalks, diced
- ¾ tsp poultry seasoning
- 6 cups cubed or shredded bread
- 1 Tbsp fresh parsley
- 1½ tsp fresh herbs (sage, thyme, rosemary)
- 1½–2 cups chicken broth
- Salt and ground black pepper, to taste
Assembly:
- 4 large, fresh baked rolls (8 slices of bread can be substituted)
- 4 Tbsp mayonnaise, divided
- Salt, to taste
- Ground black pepper, to taste
- 8 Tbsp cranberry sauce, divided
- 12 oz roasted pulled turkey, divided
Directions
- Preheat oven to 350°F.
- Melt the butter in a large skillet set over medium heat.
- Add the chopped onion, celery, and poultry seasoning.
- Cover, reduce heat to medium-low, and cook for about 10 minutes.
- Place bread cubes in a large bowl. Add cooked onion mixture, parsley, and assorted fresh herbs.
- Add enough chicken broth to thoroughly moisten bread. Stop before the bread becomes soggy.
- Add salt and ground black pepper to taste.
- Toss mixture and pour into serving dish. Top with several pats of butter.
- Cover dish with foil and bake for 30 minutes. Then uncover and bake for another 10.
- Set aside and allow to cool slightly.
- Slice each roll lengthwise and lay flat, cut side up.
- Spread 1 tablespoon of mayonnaise on both halves of each roll.
- Sprinkle with salt and pepper if desired.
- Spread 2 tablespoons of cranberry sauce over the mayo on both halves of each roll.
- Cover one of each roll halves with stuffing.
- Divide the turkey into four equal portions, and place pieces of pulled turkey on top of the stuffing for each roll.
- Place the other half of each roll over on top of the turkey pieces.
- Cut the sandwiches in half.
