The state of Virginia is famous for its Virginia ham, alternately known as country ham, or Virginia country ham. These are bone-in hams that are cured with salt. Virginia ham is delicious sliced and pan-fried and pairs especially well with a savory preparation of cauliflower and mashed potatoes, as in this recipe.

Ingredients
- 4 russet potatoes
- 1 large head cauliflower
- 1 3–5 lb virginia ham
- ½ stick of butter
- 4 oz cream cheese
- ½ cup sour cream
- ¼ cup minced green onions
- ¼ cup freshly grated Parmesan cheese
- 6 slices bacon, very crisp and crumbled
- 1 cup sharp cheddar cheese
- Salt, to taste
- Ground black pepper, to taste
Directions
- Bring a large pot of water to a boil. Add a pinch of salt.
- Peel and dice potatoes and cook them in boiling water until tender but not fully cooked, about 4-6 minutes.
- Cut out the stem and core of the cauliflower and separate into florets.
- Place cauliflower florets into pot with potatoes and cook until both are fork tender about 5-7 minutes.
- Drain the potatoes and cauliflower and mash them with a potato masher.
- Mix in butter, cream cheese, sour cream, green onion, Parmesan cheese, cheddar cheese, and crumbled bacon.
- Slice ham and fry over medium high heat in a skillet, roughly 2–3 minutes, until caramelized. Add butter or oil if needed.
- Add salt and ground black pepper to taste.
