This creamy “salad” recipe is most popular in the state of Missouri. Many ingredients have been encased in gelatin over the years. Before the invention of instant gelatin, molded salads using gelatin were a sign of affluence, as gelatin was originally derived from an intricate preparation using animal bones. The recipe shown here is close to the traditional Missouri version of peach applesauce salad.

Ingredients
- 1 cup sprite or 7-up soda pop
- 1 package peach gelatin
- 1 cup applesauce
- 2 cups whipped topping
- ⅛ tsp ground nutmeg
- ⅛ tsp vanilla extract
- 1 fresh peach, peeled and chopped
Directions
- Boil soda in a saucepan.
- Remove from heat and stir in gelatin until dissolved.
- Add applesauce and refrigerate for 15–30 minutes, or until gelatin is partially set.
- Stir in whipped topping, nutmeg, and vanilla.
- Fold in fresh peaches.
- Refrigerate until firm.
