Ingredients
Salad:
- 1 red apple
- 1 green apple
- 6 cups salad greens (a combination of arugula and baby spinach, or any spring green mix)
- 1 cup walnuts, roughly chopped
- ⅓ cup feta cheese, crumbled
- ⅓ cup dried cranberries
Dressing:
- 1 cup apple juice
- 4 Tbsp apple cider vinegar
- 2 Tbsp honey
- ½ tsp salt
- ¼ tsp ground black pepper
- ¼ cup oil
Directions
- Core and chop apples into either thin slices or 1-inch chunks.
- In a large bowl, toss lettuce, apples, walnuts, feta and cranberries together.
- In a small bowl whisk all the dressing ingredients together.
- Pour over salad and toss well.
