This bright, full-flavored salad is for those who love arugula’s peppery bite. Arugula is also known as “rocket” or “salad rocket” and is an ancient green mentioned in the Bible. As a salad green in America, it’s been increasing in popularity over the past 20 years along with the growth of “foodie” culture. Simple to prepare, the key here is the dressing, which makes this salad simply irresistible. It can also be presented as a pizza topping, and one variation is to use shavings of Parmesan as opposed to blending the cheese into the dressing.
