The carrot salad, a great showcase for sweet carrots, is popular throughout the United States. The cool and crunchy recipe shown here includes chewy raisins and is a favorite in the state of Maryland. Though used here, some recipes omit the pineapple.

- Drain excess liquid from carrots and place in a salad bowl.
- Drain the canned pineapple and cut the chunks into smaller pieces. Add to bowl with carrots.
- Add in raisins and toss well.
- Combine lemon juice, mayonnaise, sugar, and salt in a small bowl. Mix well and pour the dressing over the carrots.
- Mix again and refrigerate for about 30 minutes.
