A classic French recipe known as celeri remoulade, this is a simple salad for those who enjoy the mild taste of celery root. Also known as celeriac, celery root is a distinct vegetable that is related to but different from the vegetable we call celery. Rough and brown on the outside, the inside is white with a firm texture, and its flavor is similar to that of celery. A simple preparation keeps the focus on the crunchy celery root.

Ingredients

  • 1 celery root (about 1 lb) peeled and julienned or coarsely shredded
  • 3 Tbsp mayonnaise
  • 1 Tbsp mustard (coarse-grain or Dijon)
  • 2 tsp lemon juice
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Directions

  1. Combine mayonnaise, mustard, and lemon juice in a medium-size bowl.
  2. Season with sea salt and pepper to taste.
  3. Stir in celery root and coat well.
  4. Serve immediately or store up to two days.
