In India, fried green tomatoes are common in salads and as side dishes. This salad is not like the fried green tomatoes enjoyed throughout America, as they are not breaded but simply cooked in flavorful spices. While usually enjoyed freshly prepared, these green tomatoes become more flavorful the next day, after the spices and lemon or lime juice have had a chance to properly meld. Serve this tangy dish as a side or appetizer, a favorite with Indians who immigrated to the United States.

Ingredients
- 4 or 5 large green tomatoes
- 1 Tbsp coconut oil
- 1 Tbsp ground coriander
- ¼ tsp masala powder
- ¼ tsp sea salt
- 1 Tbsp fresh lime or lemon juice
- ¼ cup chopped cilantro
- 1 cup diced cucumber (optional)
Directions
- Cut each tomato into 6–8 segments or wedges. Alternatively, they can be cut into thick slices.
- Heat oil over medium high heat in a large skillet.
- Add coriander, masala powder, and salt.
- Add tomatoes and fry for 4–5 minutes on each side.
- Add salt and lime juice. Mix well.
- Garnish with cilantro and serve with cucumber for a refreshing salad or side dish.
