Ingredients
- 2 large grapefruit
- 1 cup thinly sliced red onion
- 1½ tsp fresh or ½ tsp dried thyme
- ¼ cup seasoned rice vinegar
- 1 Tbsp extra virgin olive oil
- 1 Tbsp honey
- 1 tsp fennel seeds
- ¼ tsp salt
- 6 cups gourmet salad greens
Directions
- Peel and section grapefruit to get 1½ cups of sections. Reserve 2 tablespoons grapefruit juice.
- Combine grapefruit, onion and thyme in a large bowl.
- Whisk together reserved grapefruit juice, vinegar, olive oil, honey, fennel seeds, and salt in a small bowl.
- Add salad greens and dressing mixture to grapefruit mixture. Toss well.
- Serve immediately.
