Many good celebratory meals in Ireland start with a salad, often an Irish pub salad. It could practically be a meal unto itself and belies many preconceived notions against salads. The egg and cheese in this dish make it filling, and the tarragon dressing adds a savory element. A wide variety of salads, an extremely flexible dish, reflect immigrant preferences, arriving in America to become classics.

Ingredients
- 9 cups shredded lettuce
- 2 cups chopped red cabbage
- 1 cup cauliflower, chopped
- ½ cup sliced cucumber
- ½ cup chopped zucchini
- 10 cherry tomatoes, quartered
- 6 hard boiled eggs, chopped

tarragon dressing
- ⅔ cup mayonnaise
- ¼ cup heavy cream
- ¼ cup water
- 1½ tsp rosemary
- ½ tsp tarragon
- ½ tsp salt
- Ground black pepper to taste
- 6 oz cheddar cheese
Directions
- In a large bowl, combine all salad ingredients. Refrigerate until ready to serve.
- In a medium bowl, combine the mayonnaise, cream, water, rosemary, tarragon, salt, and pepper.
- Grate the cheese into the dressing, or cube and incorporate throughout.
- To serve, pour the dressing over the salad and toss well.
