This recipe from West Virginia is similar to Arkansas’ wilted lettuce salad. In both recipes, bacon drippings are used to wilt the lettuce. Killed lettuce salads are popular in Appalachia and are traditionally served with a side of cornbread. Variations include diced cooked bacon, crushed red pepper flakes, radishes, or hot sauce.

- Wash greens well under cold water and set aside in a strainer to drain.
- Pat dry with paper towels and put greens in a serving bowl.
- Heat bacon drippings and sliced onion in a skillet over medium heat and cook until onion is softened, 5-7 minutes.
- Drizzle dressing onto greens.
