Bean salads are an easy way to bring some new flavors to a salad dish, and this Irish bean salad is no exception. It is extremely simple and tasty and much more filling than a light green salad. The red wine vinegar adds a nice punch to the dish in balance with the starchiness of the beans. Many bean salads derive from immigrants to the United States and are now classic American dishes.

Ingredients
- 2 cans mixed beans, drained
- 6 cherry tomatoes, halved
- 2 green onions, chopped
- Parsley, to taste, chopped
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 1 tsp whole grain mustard
Directions
- In a medium bowl, combine the beans, cherry tomatoes, onions, and parsley. Mix well.
- In a small bowl, whisk the olive oil, vinegar, and mustard together.
- Pour the dressing into the salad bowl and toss well. Serve immediately.
