In this simple yet filling salad, baked beans, potatoes, eggs, and mixed vegetables are tossed in mayonnaise for uniquely flavored dish packed with nutrients. Nigerians typically serve it as a tasty accompaniment to meat dishes. However, this tasty salad may also be enjoyed as a full meal on its own by adding pasta or pieces of tender cooked meat.

- Scrub the potatoes. Add them to a large pot and cover them with water.
- Bring the pot to a boil and then reduce heat. Simmer for 12–15 minutes, or until the potatoes are tender.
- Drain the potatoes and refrigerate to cool.
- Once potatoes have cooled, peel them and cut them into bite-sized pieces.
- Layer the following ingredients in a large salad bowl: potatoes, lettuce, carrots, cucumbers, baked beans, sweet corn, and plum tomatoes. Finish with the sliced eggs on top.
- Refrigerate until serving.
- To serve, add mayonnaise and stir well. Serve chilled.
Notes
A substitute dressing can be made from equal parts mayonnaise and ketchup, with a dash of vinegar.
