A simple standout, this salad is juicy and creamy with bright accents of lime and chili. A great starter to Mexican flavored dishes, this could be served on salad greens or as filling for corn tortillas. Ruby red grapefruit could replace the oranges and using seasonal citrus will provide the best flavor. Variations include adding feta cheese, pomegranate seeds and a finishing drizzle of olive or flavored oil.
