Salat Olivier is a traditional Russian salad. Consisting of cubed vegetables, boiled eggs, peas, pickles, and meat, this dish is topped with a creamy dressing and served cold. Salat Olivier is named for the French chef who created this dish in Moscow in the 1860s.

Ingredients
- 5 potatoes
- 3 carrots
- Water, for cooking
- 4 eggs, boiled and cubed
- 1 lb boiled beef brisket
- 2–3 dill pickles
- ½ lb green peas
- Salt, to taste
- Mayonnaise, to taste
- Sour cream, to taste
Directions
- Add potatoes and carrots to a large pot filled with water. Bring to a boil and cook until tender, about 30 minutes.
- Cool carrots and potatoes under cold running water. Peel potatoes.
- Chop potatoes, carrots, eggs, meat, and pickles into ½-inch cubes.
- Put chopped items into a large bowl, add green peas and salt, and stir in enough mayonnaise and sour cream to lightly dress the salad.
- Mix ingredients and refrigerate for 30 minutes.
- Serve cool.
