Watergate Salad

Watergate salad is a refreshing combination of pistachio pudding, pineapple, marshmallows, pecans, and whipped topping. The origin of the name is unclear, with some believing it was created by a chef at The Watergate Hotel in Washington D.C.; however, the dish became popular during the political scandal that shares its name. Watergate salad is especially well-loved in the Midwest where it is commonly served at gatherings as a side dish or dessert.

Ingredients

  • 1 package Jell-O pistachio flavor instant pudding
  • 1 can (20 oz) crushed pineapple in juice
  • 1½ cups whipped topping
  • 1 cup mini marshmallows
  • ½ cup chopped pecans

Directions

  1. Stir together the pudding mix and pineapple with its juice in a medium-size bowl until smooth.
  2. Fold in the whipped topping and marshmallows.
  3. Cover and chill in the refrigerator for at least 60 minutes.
  4. Sprinkle the pecans over the salad before serving.
