A surprisingly refreshing combination of sweet watermelon and tangy feta, this salad is a cooling choice for hot summer days. The salad has Mediterranean roots, as feta is Greek in origin, and is sometimes served over arugula. Simple salads require high quality ingredients and are essential here. One variation calls for stacking alternating squares of the melon and cheese for a visually appealing presentation. The onion could be left out or basil used in place of mint.
