- Heat oven to 350°F.
- In a large saucepan, bring water to a boil, then lower heat to medium and add sweet potatoes in their skins.
- Cook for 20 minutes, adding the carrots after 10 minutes.
- Drain and let cool.
- Peel and cut the carrots into 2-inch pieces and peel and cut sweet potatoes into 1-inch chunks.
- Place the carrot and sweet potato pieces in a large bowl.
- Add prunes, apricots, lemon and orange juices, honey, cinnamon, orange zest, and salt and mix well.
- Transfer mixture to a 2-quart baking dish and cover with aluminum foil.
- Bake for 30 minutes, basting with pan juices after 15 minutes.
- Serve hot.
