Tzimmes

This stew is popular in Jewish homes as part of Rosh Hashanah meals. Made from sweet root vegetables and dried fruit, tzimmes also can be prepared non-vegetarian, with chunks of brisket added to the mix. Using honey and sweet flavors symbolizes hope for a great new year to come.

  1. Heat oven to 350°F.
  2. In a large saucepan, bring water to a boil, then lower heat to medium and add sweet potatoes in their skins.
  3. Cook for 20 minutes, adding the carrots after 10 minutes.
  4. Drain and let cool.
  5. Peel and cut the carrots into 2-inch pieces and peel and cut sweet potatoes into 1-inch chunks.
  6. Place the carrot and sweet potato pieces in a large bowl.
  7. Add prunes, apricots, lemon and orange juices, honey, cinnamon, orange zest, and salt and mix well.
  8. Transfer mixture to a 2-quart baking dish and cover with aluminum foil.
  9. Bake for 30 minutes, basting with pan juices after 15 minutes.
  10. Serve hot.
