Also called turtle beans, black beans are native to North America. They were a staple in the diets of Central and South Americans 7,000 years ago and remain popular in Latin American cultures today. Rich in protein, black beans appear in soups, stews, dips, and salads and are commonly served with rice. They also are a popular ingredient in Cajun and Creole dishes.

Ingredients
- 1 can (16 oz) black beans
- 1 small onion, chopped
- 1 garlic clove, chopped
- 1 Tbsp fresh cilantro, chopped
- ¼ tsp ground cayenne pepper
- Salt, to taste
Directions
- Combine beans, onion, and garlic in a medium pan and bring it to a boil.
- Reduce heat to medium-low.
- Stir in cilantro, cayenne pepper, and salt.
- Simmer for 5 minutes, remove from heat, and serve immediately.
