Buckwheat Pancakes

Buckwheat pancakes are much more common in West Virginia than traditional pancakes made with wheat flour. These pancakes have a more complex flavor than wheat pancakes, although they are similar enough to be interchangeable. Despite its name, buckwheat—which is a seed—does not contain wheat, which makes it appealing to the gluten-free crowd.
