Grits are a southern staple and have been for centuries. Native Americans introduced colonists and early settlers to the ground corn dish, making this a genuine American food. Grits can be served as breakfast—along with eggs or ham—or combined with other ingredients like shrimp, a popular dish in coastal South Carolina and Georgia. Most of the grits sold in the United States are bought in the South. Adding cheese to grits makes the dish even creamier.

- Bring milk, water and salt to a boil in a heavy bottomed pot over medium high heat.
- Slowly add cornmeal and whisk while mixture is boiling.
- Decrease heat to low and cover.
- Whisk every 3–4 minutes for the next 20–25 minutes, until mixture is creamy. This prevents grits from sticking or forming lumps.
- Remove from heat, add pepper and butter and whisk to combine.
- When butter is melted, gradually whisk in cheese a little at a time.
- Serve immediately.
