Com tam, or broken rice, is a Vietnamese dish made from fractured grains of white rice. The word com refers to cooked rice while tam refers to broken rice grains. Deemed inferior, broken grains of rice are separated from the whole grains and sold separately as broken rice. Traditionally a more affordable grain that results from being damaged during the milling process, broken rice is simply fragmented, not defective. It is commonly used in place of whole grain white rice as a side dish. In Vietnamese cuisine, it is typically served as part of a combination plate with grilled and shredded pork, eggs, pickled vegetables, and a sweet sauce.

Directions
- Rinse the rice with cool water 2–3 times or until the water is mostly clear.
- Pour the rice into a rice cooker and add the water and salt. Let the rice soak for 30 minutes.
- Set the cooker to cook on the standard white rice setting. After cook time is completed, typically around 20 minutes, stir the rice.
- Cover and keep warm until ready to serve.
