Couscous are tiny grains of crushed durum wheat. It is popular in North African diets with stew served on top. Versatile couscous works well as a side dish, on its own, or mixed with chopped vegetables, herbs, and dressings. Most couscous in the United States is of the instant, or quick cooking variety. This tiny pasta has grown in popularity over the past few decades.

Ingredients
- 1¾ cups chicken or vegetable broth (or water)
- ½ tsp salt
- 1 Tbsp unsalted butter
- 1 Tbsp extra virgin olive oil
- 1½ cups (10 oz) couscous
Directions
- Combine the broth or water, salt, butter, and oil in a medium saucepan and bring it to a boil.
- Stir in couscous, cover with lid, and remove from heat.
- Let couscous steam for 5 minutes.
- Fluff couscous using a fork, breaking up any clumps.
- Serve warm.
