Green beans are native to the Americas, originally cultivated in Peru and then spreading outwards to South America and north to Central America. Green beans were grown in North America alongside corn by indigenous peoples and were introduced to Europe in the 16th century by returning explorers. Today, green beans are one of the most popular legumes in the country.
Fresh green beans are easy to come by year-round in the US South, making them an essential vegetable in Southern cuisines. Green beans are particularly prevalent in the African American soul food tradition. This preparation shows its roots in French cookery through its use of butter, flour, and milk, which combine for a creamy, velvety texture.
