Cucumbers originate from India and date to ancient history. Cucumber salads may be a French creation and can be found in a French cookbook from 1651. It’s possible that people were combining cucumbers and vinegar long before that. A Dutch recipe similar to this one exists from 1701. Perhaps either French or Dutch immigrants can claim credit for introducing Americans to cucumber salads. Cucumber salads are a cooling complement to spicy food and are refreshing during hot summer months.

Ingredients
- 2 small English cucumbers, thinly sliced
- 1 cup thinly sliced red onion
- 2 Tbsp white wine vinegar or rice vinegar
- 1 Tbsp white vinegar
- ¼ tsp salt
- ¼ tsp ground black pepper
- ¼ tsp sesame oil
Directions
- Combine all ingredients in a large bowl and toss to combine.
- Cover and refrigerate for 60 minutes before serving.
