Delmonico potatoes is a dish created at Delmonico’s, a famous New York City restaurant, around 1830. The earliest menu from the establishment, dating to 1838, included the item pommes de terre a la maître d’hotel. Pommes de terre means “potatoes” in French and a la maître d’hotel literally means “by master of the house” which can be translated as “the house specialty.” So in English, the name translates simply to Delmonico potatoes. Today the dish remains a classic served in restaurants and homes across the United States.

- Preheat oven to 425°F and grease a baking dish using nonstick cooking spray.
- Wash but do not peel the potatoes, and then cut each one lengthwise into four pieces.
- Bring the water to a boil in a large saucepan, and then add the potatoes.
- Boil potatoes for about 10 minutes, or just until tender. Drain.
- Immerse hot potatoes immediately in cold water and let cool for 30 minutes before draining.
- Grate potatoes into long strips.
- Stir together the milk, cream, salt, pepper, and nutmeg in a bowl.
- Place a large frying pan over medium heat and add the potatoes and milk mixture.
- Cook for 10 minutes, gently stirring occasionally.
- Remove pan from heat and stir in 1 tablespoon of the Parmesan cheese.
- Spread the potato mixture evenly into the baking dish and sprinkle it with the remaining tablespoon of Parmesan cheese.
- Bake in the oven for 6 minutes, or until lightly browned.
- Remove dish from oven and serve immediately.
