Peas salads are popular throughout the South and many recipes call for bacon or cheese. Because peas are a spring vegetable, this salad is often eaten when peas are in season or at Easter as a symbol of innocence. Frozen peas make this an easy salad to make year-round. Fresh peas have a sweetness that cannot be found in canned peas. Frozen peas make for an easy alternative when fresh peas are not available.
