Dirty rice is a Southern staple and gets the name from the “dirty” color imparted from the meat used to flavor the dish. Dirty rice was considered food of the poor, as it was created from the chicken leftovers handed down to slaves and tenant farmers from Southern plantation owners. Cooks combined the meat with rice, vegetables, and seasonings, providing their family with a sustaining meal. The dish is most common in Creole country of southern Louisiana but can be found throughout the American South.

Ingredients
- 1 Tbsp olive oil
- 8 oz lean ground beef
- 8 oz bulk sausage
- ½ cup minced chicken liver (optional)
- 1 medium onion, diced
- 1 green pepper, diced
- 1 cup diced celery
- 3 garlic cloves, minced
1½ tsp Cajun seasoning
- 1½ cups white rice
- 3½ cups chicken broth
- 2 bay leaves
- Salt, to taste
- Ground black pepper, to taste
- Green onion, as needed for garnish
Directions
- Heat oil over medium-high heat in a Dutch oven or heavy bottomed pan.
- Add beef, sausage and chicken liver, if using. Cook until no pink remains.
- Add onion, green pepper, celery, garlic, and Cajun seasoning. Cook until softened, about 5 minutes.
- Add rice, broth and bay leaves.
- Bring to a boil, reduce heat and simmer covered 20–25 minutes or until rice is cooked. Season with salt and pepper.
- Garnish with green onion and serve.
