Isu (yam) cultivation is widespread in Africa, especially in West Africa, where yams are used to make staple dishes like fufu. Yams can be as large as 2 feet long and can be white, orange, or yellow inside. In the United States, pounded yam flour is sold in many West African groceries, allowing Nigerian Americans to recreate many homeland staples at home.

- Yams, peeled, washed, and cut into pieces ½ inch wide
- Water, for cooking
Directions
- Place the yams in a pot with enough water to cover. Cook for 30 minutes.
- Use a mortar and pestle to pound the yam into a smooth, soft dough.
- Form into balls and serve hot with stew.
