Funeral Potatoes (Hash Brown Casserole, Cheesy Hash Browns, Party Potatoes)

Funeral potatoes, a variation of au gratin potatoes, are a casserole-type side dish that is commonly served at potlucks, holidays, church dinners, and other social gatherings. The recipe is most often credited to the women of the Relief Society of the Church of Jesus Christ of Latter-Day Saints in the Intermountain Region who make the dish for funeral luncheons and dinners. Like most recipes, there are variations of funeral potatoes with some adding ham, bacon, jalapeños, or perhaps using breadcrumbs on top in place of the flakes.

Ingredients

  • 2 cups sour cream
  • 1 can (10.5 oz) cream of chicken or cream of mushroom soup
  • 1 cup butter, melted and divided
  • 1 tsp salt
  • 1 tsp onion powder
  • 2 cups cheddar cheese, shredded
  • 2 packages (12 oz each) frozen shredded hash browns, thawed
  • 2–3 cups Corn Flakes cereal, crushed

Directions

  1. Preheat the oven to 350°F.
  2. Combine the sour cream, soup, and ½ cup melted butter in a bowl, mixing it well.
  3. Add the salt, onion powder, and cheese and mix until well combined.
  4. Add the potatoes to the mixture and stir until well combined.
  5. Transfer the mixture to a 9 x 13-inch baking dish and spread it out evenly.
  6. Combine the crushed Corn Flakes and ½ cup melted butter in small bowl and stir until the flakes are coated with butter.
  7. Sprinkle the flakes over the potatoes.
  8. Bake the dish uncovered for 40–50 minutes.
