Ingredients
- 1 lb fresh asparagus, trimmed
- 2 zucchini, ends trimmed and halved lengthwise
- 2 yellow squash, ends trimmed and halved lengthwise
- 1 large red onion, sliced into ½-inch thick slices
- 2 red bell peppers, halved and deseeded
- 1 clove garlic, minced
- 1 Tbsp Dijon mustard
- ½ cup olive oil
- ¼ cup red wine vinegar
- Salt, to taste
- Ground black pepper, to taste
Directions
- Preheat grill to medium heat.
- Lightly oil grill or grill pan.
- Place asparagus, zucchini, squash, onion and peppers on grill or in pan.
- Cook vegetables until tender, turning a few times, until slightly charred, 10–15 minutes.
- Remove vegetables from grill and cut into bite-sized pieces.
- Whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper in a small pan.
- Place vegetables in large bowl and toss with dressing.
- Serve warm or at room temperature.
