Jicama is a firm vegetable with a mild flavor that’s reminiscent of apple and water chestnuts. With origins in South America and Mexico, it is also referred to as a Mexican potato or Mexican turnip. If not available at the supermarket, check for jicama at specialty Asian or Mexican markets.

- Toss together the jicama, red pepper, mango, and red onion in a large bowl. Set aside.
- Stir together the cilantro, lime juice, honey, salt, and cayenne pepper in a small bowl.
- Pour the lime mixture over the jicama mixture and toss to coat well.
- Cover and refrigerate at least 15 minutes.
