Lemon pilaf is the perfect accompaniment to many Mediterranean dishes, including roasted or grilled meats, seafood, and vegetables. Although pilaf originated in the Indian subcontinent, it is an ancient part of Greek and Turkish cuisine; the dish is known to have been served to Alexander the Great, after which it spread across Macedonia and thereby reached Ancient Greece.

- Heat butter in a saucepan over medium-high heat. Add onion and sauté until tender.
- Add rice and orzo. Cook, stirring, for 2 minutes.
- Add chicken broth and lemon juice. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes, until rice is tender and all liquid has been absorbed.
- Fluff with a fork before adding chopped parsley and serving.
