This simple dish is one of the most popular tapas in Spain. Tapas are a variety of small dishes, often simple recipes with just a few ingredients, eaten as snacks. Potatoes are the star in patatas bravas, where chunky pieces are fried and topped with a spiced tomato sauce. “Bravas” means “brave” referring to potatoes standing up to the spicy sauce, the heat level of which can vary.

Ingredients
- 4 large white potatoes
- 2 Tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 chili peppers, chopped
- 1 Tbsp paprika
- 2 tomatoes, peeled, deseeded, and chopped
- Salt, to taste
- Sugar, to taste
- 1 Tbsp flour
- ½ cup water
- 2 cups chicken broth (or ham broth)
- 2 Tbsp sherry vinegar
- Extra virgin olive oil, for frying
- 3 cloves garlic, peeled
Directions
- Cook potatoes in large pot of boiling water for 25 minutes. Set aside to cool.
- In large pot or Dutch oven, heat 2 tablespoons olive oil on medium high heat, add onion and fry until translucent, about 6 minutes.
- Add minced garlic and chili peppers and cook until garlic is lightly browned and then remove pot from heat.
- Add paprika, mixing well and returning pot to low heat.
- Add tomatoes and cook on low heat for 20 minutes, stirring regularly.
- Add sugar and salt to taste.
- Dissolve flour into half cup water in small bowl and pour into tomato sauce mixture, mixing well.
- Add chicken or ham broth, cooking on low for 20 minutes.
- Remove sauce from heat and let stand 10 minutes before adding vinegar.
- Pour sauce into blender and blend until smooth.
- When potatoes are cool, peel and cut into pieces about ½- to 1-inch size chunks.
- Heat 2–3 cups olive oil in a pan over medium low heat.
- When oil is very hot add potatoes and fry with whole garlic cloves until potatoes are golden brown.
- Remove potatoes from pan and drain on paper towels. Discard garlic cloves.
- Place potatoes on plate or serving platter and pour sauce over top.
- Serve immediately.
