Samp​, a popular staple in South African nations, is dried corn kernels that have been crushed and chopped until broken, but that are left coarser than mielie meal or cornmeal. Often served as a side dish, samp and beans recipes in America vary with some adding meat and vegetables to make it a complete meal.

Ingredients
- 4 cups dry samp
- 2 cups dry black-eyed peas or other beans
- salt, to taste
Directions
- Soak samp and peas in enough water to cover and let stand overnight.
- Drain, rinse, and cook in a large pot.
- Bring to boil, reduce heat, and simmer on low heat for 2 hours until mixture is tender and almost dry.
- Season with salt and serve hot.
