Scalloped rutabaga and apple is a traditional Scandinavian dish introduced to America by immigrants. The frost-tolerant vegetable rutabaga thrives in colder climates like that of northern states such as the Dakotas and Minnesota. These states also are home to a large population of Scandinavian Americans, which makes this an especially popular dish in that region.

Ingredients
- Nonstick cooking spray, as needed to grease dish
- 3 cups rutabaga, peeled and sliced
- 2 medium apples, peeled and sliced
- ½ cup brown sugar, packed and divided
- 3 Tbsp butter, cut into pieces and divided
- Dash of salt
Directions
- Preheat the oven to 350°F and grease a casserole dish using nonstick cooking spray.
- Boil the rutabaga in a saucepan of salted water until it just starts to become tender. Drain.
- Spread half of the rutabaga slices evenly into the bottom of the casserole dish followed by a layer of apple slices.
- Sprinkle ¼ cup of the brown sugar, about half of the butter pieces, and the salt over the slices.
- Add the remaining rutabaga and apple slices to the casserole dish.
- Sprinkle the slices with the remaining ¼ cup of brown sugar and butter pieces.
- Bake for 30–35 minutes, until rutabaga and apple slices are tender.
